This is not my recipe. I found it on the internet and have no idea where.
Sweet Potato Cookies
2 1/4 cup flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1/4 tsp. nutmeg
1 cup butter
3/4 cup brown sugar
1/2 cup sugar
3/4 cup sweet potato puree
1 egg
2 tsp. vanilla
1 1/2 cup toasted pecans, chopped
Mix dry ingredients. Cream butter, potato, sugar and egg. Mix with dry ingredients, then add pecans. Scoop 1” balls. Bake 400 degrees for 10 min until set. Can be glazed.
I have to use alternative ingredients, so my cookies are brown rice flour with coconut oil and very little sugar. To me, they remind me of Snickerdoodles in that they have a mild flavor and a medium texture (not hard, not soft). If you wanted to get adventurous and put mini chocolate chips in them, that would probably be good too!

I don’t usually bake cookies because…well….I’m lazy.
I still have an abundance of sweet potatoes from the garden, so I decided to try out a new recipe – Sweet Potato Cookies.
A surprise arrived when I went to make the cookies – a double yolked egg! I have no idea if they are good luck or not, but they did make the cookies extra cholesterol-y.
I got this cookie plate probably 30 years ago, but I never got to use it until now. I just felt like celebrating that the puppy and kitty finally got to watch for Santa.
Don’t I get to have some? I like sweet potatoes.

Did you know that there is such a thing as a Kronosaurus? I didn’t. (Although older visitors might remember them from the playground when they were children.) In addition, there also existed a Charonasaurus. To make matters even more confusing, there is the Chronosaurus which is a species of time-traveling dinosaur from a contemporary video game.
I thought I had misheard someone say “Chronosaur” instead of “dinosaur” and my mind leapt to Langolier-style lizards eating time and those who failed to evolve. Turns out the speaker really did say Chronosaur.
I guess the take away from this is that while I am hopelessly out of touch both with ancient sciences and contemporary games, at least my hearing is OK.
That is a matter of debate. I have been telling you that I am hungry for weeks, but you never seem to hear.

While our snow stopped during the night, the wind continued till morning. We ended up with knee-high drifts over most of the yard. Toby still loves boinging out in the snow, but now that he has put on extra weight, he no longer lands on top. I suspect Geordie is having a big laugh at his expense this week!
